Apple and Walnut Quinoa Salad from our Recipe Calendar

Now the summer seems to be upon us thoughts are turning to dishes we can take along to BBQs or light lunches. This fruity salad recipe, sent in by Ben Smith, would be perfect for both. 

INGREDIENTS

For the salad
100g quinoa (or rice, if preferred)
1 stick of celery
1 apple (Royal Gala or similar)
½ cup of raisins
½ cup of dates
½ cup pf walnuts
2 tbsp rapeseed oil (or extra virgin olive oil)

To finish
2 walnuts
slice of apple

method

For the salad

Add quinoa or rice to boiling water, cover and simmer until tender following the packet instructions. Drain and then rinse off any starch with cold water. Allow to drain thoroughly – for best results, store in the fridge overnight.

Put the quinoa or rice in a bowl. Chop the apple, celery, dates and walnuts into bite size pieces. Add the raisins, oil, and chopped ingredients to the quinoa/rice and then mix thoroughly.

To finish

Decorate with the slice of apple and a couple of walnuts.
