Budget Vegan Recipes – Cauliflower
I don’t know about you, but I can sometimes spend as much time examining the contents of my cupboards as I do making our family meals! It can be especially hard to come up with meal inspiration if you’re on a budget. In a new feature, each week we’ll be featuring a staple ingredient and 5 different dishes that can be created using it.
This week we’re turning our attention to the humble cauliflower. This veggie from the brassica family has seen a resurgence of interest lately thanks to its use in pizza bases and in place of rice. Versatile and readily available, it is also packed with antioxidants. In the following recipes fresh or frozen cauliflower can be used.
This simple dish can cobbled together quickly and allowed to simmer while you’re doing other jobs. It is even better the following day once the flavours have had longer to develop. Tesco have a great version on their website – which can be found here – or you can try to craft your own using herbs and spices in your store cupboard to taste. I throw in a tin of chickpeas to mine for added protein. Having a tin of coconut milk as a store cupboard staple is something every vegan should do as it has many uses.
Spiced Roast Cauliflower
Having tried a whole roasted head of cauliflower last year for the first time in Berlin I was surprised by how tasty this method of cooking a vegetable normally boiled to within an inch of its life was. This recipe from the BBC Good Food website is also perfect for a leftover lunch the following day. Just make sure you reheat the rice well before eating.
Vegan Cauliflower Cheese
One of the ultimate comfort foods, Cauliflower Cheese is often seen as a side. This recipe by Lee Watson, which also features broccoli amongst its ingredients, elevates the vegetable to the star of the show rather than an after-thought. The cashew cream sauce can also be stored in the fridge, which means if you’re time pressed you can prepare some of the elements in advance. More details can be found here.
This spin on the Italian classic, which usually stars aubergine as its main ingredient, is perfect either as a main dish or super side. We like the idea of the herby tortillas which accompany the dish, especially as gluten free versions are available in the supermarkets. A great summer dish that would wow at a BBQ.
This simple vegan Cauliflower Soup from The Simple Vegan blog will be a great winter warmer. It also doesn’t feature a lot of fancy ingredients so is perfect for those who are watching their purses/wallets.
