Coconut Joys from our Recipe Calendar

This quick and simple recipe for Coconut Joys, sent in by Wombler Barbara Gray, is the perfect snack for those who love coconut and have a sweet tooth. There’s no need to cook this treat and the ingredients aren’t difficult to find, you may even already have them in your store cupboard.


For the filling

1 ½ cups desiccated coconut
1 tbsp melted coconut oil
1 tbsp liquid sweetener

For the chocolate covering

4 tbsp melted / cacao butter
¼ cup cacao powder
2 tbsp liquid sweetener

To finish

Sliced almonds (optional)


For the filling

Mix half of the coconut in a food processor until you get a chunky but buttery consistency. Add the rest of the ingredients until it all sticks together in a stiff paste. If it doesn’t stick together, add a little more liquid sweetener. Press into balls approximately 1” (2.5cm) and place in the fridge for around one hour until they are set.

For the chocolate covering

After melting the butter, mix all ingredients together and set aside. Keep the mixture warm. With 2 forks, dip the coconut balls into the warm chocolate and allow to cool on greaseproof or waxed paper.

Top with the sliced almonds (if using).
