Green Pepper and Kale Soup from our Recipe Calendar

Before Christmas I told you all about our limited edition recipe calendar and the contributors. Well we only had a small print run and it sold out really quickly! So as lots of you missed out on the calendar we thought we would feature the recipes on our blog one at a time.

Firstly, we are sharing January’s recipe for Green Pepper and Kale Soup which was submitted by Mike Rigby. He has another recipe featured too for a lovely dessert, but you will have to wait until August for that one! Be sure to visit each month to see all the recipes from our calendar.

For the soup

2 green bell peppers/capsicums
1 medium onion
2 cloves garlic
150g kale
100g spinach
approx. 600ml water
1 good-quality stock cube
extra seasoning to taste
2 tbsp oil/vegan butter
(optional: small apple, diced)

For the garnish

vegan cream (e.g., soya, oat)
herbs (fresh or dried, e.g. parsley)

For the accompaniment

any bread/artisan loaf of choice
vegan butter


For the soup

Roughly chop the pepper, onion and garlic. Lightly sautée for approx. five minutes in a high-sided pan.  Add kale, spinach, water and stock cube (plus diced apple, if using). Bring to a boil and then a low-simmer for five minutes with a lid on. Blend with a handheld/immersion blender or transfer to a high-speed blender until desired consistency is achieved. Check for seasoning and adjust accordingly. (An interesting variation is to sautée the fine-diced apple in vegan butter and stir in after blending).

For the accompaniment

Grill/toast bread, butter it and slice into fingers.

To finish

Pour soup into bowls and garnish with cream and herbs. (Pictured using oat cream and dried wild garlic.)
