Snicker Cups Recipe
Homemade snickers made in a cup shape. Can make them in any chocolate moulds or silicone ice cube trays. Sugar Free, Wheat Free, Vegan.
1 cup coconut oil
1/2 cup cocoa
1/4 cup sweet freedom ( this is a fruit based sweetener made only with apples, grapes and carob!)
1/2 cup raisins
1/2 cup dates
3 tbsp. sweet freedom
2 tbsp. cashew butter
1 1/2 tsp vanilla extract
Small pack of salted nuts (you will have some left over)
Put the raisins and dates in a bowl and cover with cold water and leave to soak for an hour.
Once soaked start making the chocolate. Put the chocolate ingredients in a blender and blend, then set aside in a jug. Then blend the caramel ingredients (no need to wash blender in between).
Pour some chocolate into each cup/mould and move it up the sides a little. Don’t worry too much about this. Then add some caramel into the chocolate cups, leaving a little space around the outside for more chocolate. Add some salted peanuts to each cup/mould. As many or as little as one depending on how peanut-ty you want them and how big your moulds are. Pour the rest of the chocolate over the peanut/caramel filling and let it pour down the sides. Freeze until set. Best to keep them in the freezer and they are ok to eat straight from the freezer. Can be kept in the fridge if preferred. If you keep them at room temperature the coconut will melt as soon as you pick them up to eat. Enjoy!
Please note you can use any sweetener, I just prefer sweet freedom which is made from apples, grapes and carob only. You could also use all dates or all raisins for the caramel and of course you can use any nuts, salted or otherwise. If you want them to serve at room temperature than of course you can use shop bought chocolate and as a friend suggested you could use lotus spread instead of date and raisin caramel. Of course it wouldn’t be sugar free then! Please note this is based on this recipe with a few very slight changes.
