Snickers Style Overnight Oats from our recipe calendar

This recipe from our 2018 calendar was created by the original Vegan Womble, Sandra Murrell. It could be used as a tasty breakfast dish or a pud for those looking for something a bit different and healthy.

INGREDIENTS

For the oats layer
1/2 cup oats
1/2 cup plant milk
1/2 tbsp ground flax seed

For the caramel layer
1/4 cup raisins
1/4 cup dates
1 1/2 tbsp liquid sweetener
1 tbsp peanut butter
(smooth or crunchy)
1 tsp vanilla

For the chocolate crunch layer
1/4 cup creamed coconut, softened (coconut butter)
2 tbsp cocoa powder
1 tbsp liquid sweetener

For the chocolate pudding layer
1/4 cup oats
1/4 cup plant milk
1/2 tbsp ground flax seed
1 tbsp cocoa powder
1 small banana

To finish
chopped peanuts or mixed nuts to sprinkle on top

Method

For the oats layer
Mix all three ingredients in a bowl and leave it in the fridge overnight.

For the caramel layer
Soak the fruit overnight, then drain and whizz all the ingredients in a food processor to make into a creamy consistency.

For the chocolate crunch layer
Put the pack of creamed coconut in a mug and add boiling water to melt the butter. If it’s sealed, just add enough water to cover a quarter of it, and then press out 1/4 cup. If it’s open, be careful not to get water in it. Whizz all three ingredients in a food processor until a crunchy consistency is achieved.

For the chocolate pudding layer
Whizz all five ingredients in a food processor until creamy.

Assembly
Assemble in order you wish. I use the chocolate crunch at the bottom, followed by the chocolate pudding, followed by the oats, then the caramel layer, crunch again, pudding again, then top with crunch and chopped peanuts.
