Nutty Nice Cream Caramel Stacks from our recipe calendar

This incredible recipe was sent to us by Mike Rigby to include in our calendar. It definitely has the Wow factor! Most of the ingredients will be ones you may have in your cupboards and fridge so what are you waiting for? It serves 6, or 3 greedy people if our house is anything to go by…

INGREDIENTS

For the pastry
3 puff pastry sheets
approx. 30g fine sugar for dusting

For the filling
300g frozen bananas, blended into ‘ice cream’
optional: add a small amount of peanut butter and/or syrup into the blend

To finish
approx. 30g crushed/chopped pecans (or similar nut of choice, e.g. walnuts)
syrup (such as caramel, maple, agave, date etc)

METHOD

For the pastry
Cut puff pastry into discs approx 6-8cm wide, dust with the sugar and bake between baking sheets (to restrict any rising) for approx 15 minutes at 160 c.

Assembly
When cool, fix the bottom disc to the serving plate with some syrup and pipe or scoop the nice cream onto the pastry. Top that with the middle disc, add next ice cream layer and then place last disc on top.

To finish
Sprinkle with crushed pecans, dust with more sugar and dress with syrup. Pictured using coconut sugar and caramel agave syrup.
